The Easiest Baked Chicken Tacos

It’s no secret I love tacos, which I’ve discovered the magic of in the past year. Ever since I decided I love Mexican food, I’ve gone for nachos or any form of carnitas at every restaurant and neglected to try other delicious dishes. After attending enough taco Tuesday nights with my sister, I started trying soft tacos from every eatery I could find and have gathered a few places that make my favorite baja fish, carnitas, and carne asada tacos. However when I’m trying to save money or can’t go out to eat, I’ll be making these outrageously delicious baked chicken tacos that are as easy to cook as they are tasty! I don’t eat a lot of crunchy tacos because they fall apart too easily and seem to be a better version as nachos, but the way these baked chicken ones come together almost make the mess worth it. I filmed myself cooking this quick and simple meal for my TikTok and I hope you make and love them as much as I do!

Ingredients (for 5 tacos):

  • 5 flat bottom taco shells
  • 2 chicken thighs
  • 1/4 sweet onion
  • 1 small head romaine lettuce
  • 8-10 cherry tomatoes
  • 1/2 packet taco seasoning
  • Shredded Mexican cheese
  • Sour cream

Instructions:

  1. Cut lettuce into 1/2 inch pieces
  2. Halve cherry tomatoes
  3. Set vegetables aside for later
  4. Cut chicken thighs into bite-sized pieces
  5. Finely dice onion
  6. Cook chicken and onions until almost fully cooked
  7. Add taco seasoning and a bit of water to dissolve the powder packet in the pan
  8. While chicken and onions are cooking, preheat convection oven or regular oven to 350 degrees
  9. Place 5 taco shells in a glass dish or pan and bake in the oven for 5 minutes or until lightly golden
  10. Remove shells from oven when toasted and sprinkle inside with a thin layer of cheese
  11. When chicken mixture is cooked and seasoned, add about 1/4 cup to taco shells
  12. Top chicken mixture with more cheese
  13. Bake in oven again for 5-10 minutes or until cheese is bubbly and melted
  14. Let tacos cool for 5 minutes and top with lettuce, tomatoes, sour cream, salsa, and any other taco toppings of choice
  15. Enjoy with a side of chips and queso!
