Every quick trip to Waco with my family seems too short and this mini vacation was no different. On days two and three of dad’s and my trip to Waco, we swiftly accomplished all of our tasks related to my apartment sale, ate at many of my most beloved Waco eateries, and even got to squeeze in reunions with some of our favorite people. Days two and three went by rapidly as we spent the majority of Saturday moving furniture out of my apartment and cleaning the remainder of the pieces I left in my room and kitchen. We were lucky enough to have some of dad’s friends take all of the furniture to one of my friend’s houses before we ate breakfast at George’s. One of my most recent delicious food discoveries is the Best Donuts and Kolache Shop in Valley Mills. The kolache bread tastes like my favorite baked char siu bao dough and I adore their glazed donut holes with chocolate sauce on top. I was exhausted after all the eating and driving (as I would be) so I napped for hours before we finished the day with catfish, fried chicken, gumbo, and salad at Cajun Craft. Even though Lo abandoned us at dinner, she took me out for Katie’s Custard so I forgive her for now. On day three, dad and I met some of our friends for lunch at Don Carlos (I’ve been eating a lot of Mexican food lately and I’m still figuring out who I am now) where I thoroughly enjoyed their enchiladas and queso. We drove around for a while to kill time before meeting up with one of our favorite people at Common Grounds. We finally finished the last day in Waco with dinner at Texas Roadhouse with Lo, Jonathan, and Urn and said goodbye for now to Baylor. As expected, days two and three were full of delicious food and sweet reunions with the Waco people we love most. I’m thankful to have a home away from home where I know I’ll always have more family and beloved foods!
