I know I just shared a food/cooking post the other day (I don’t go out anymore and cooking is all I do now!), but I really wanted to get this post in before this weekend’s Baylor Football game against Iowa State! I recently started a TikTok account (I know, I’m probably too old for this app and a little late to the program) because I thought it would be fun to share the dishes I cook, clothes I purchase, and football opinions I harbor. I’ve filmed and posted a couple other videos on my account already, but I wanted to share this one specifically because I’m the most proud of it and its quality! In it, I decided to cook my favorite ever stuffed bell peppers for dinner and talk about Baylor Football QB Gerry Bohanon. Gerry has been a shining star of the Baylor offense these past three weeks and I’m increasingly impressed by his calmness in the pocket, ability to perfectly connect with receivers on screen passes and deep ones, and his speed when he needs to run. Of course there are other outlets to share my thoughts on Gerry’s performance, but I thought TikTok would be a fun place to talk about the QB while also preparing one of my favorite dinners ever!   • Four bell peppers
  • One pound ground beef or turkey
  • 28 oz can crushed tomatoes
  • One cup quinoa
  • One and a half cups chicken stock
  • Half onion
  • Three cloves of garlic
  • One packet taco seasoning
  • 3/4 cup shredded cheese of choice
  • Olive oil to taste
  • Salt and pepper to taste


  1. Preheat oven to 400 degrees
  2. Bring chicken stock to a boil and add quinoa to the pot once the liquid is ready
  3. Reduce quinoa to simmer and cook for 15 minutes, stirring occasionally
  4. Prep the onion and garlic by chopping into small cubes and crushing into tiny pieces
  5. Slice peppers in half and remove seeds
  6. Cook onion and garlic until translucent and fragrant
  7. Add ground beef or turkey to mix and drain oil once finished cooking
  8. Drizzle olive oil over bell peppers and sprinkle with salt and pepper
  9. Place in baking dish and roast for 7 minutes
  10. Season meat with taco packet
  11. Once quinoa is finished cooking, add to meat mixture
  12. Pour crushed tomatoes into the meat and quinoa
  13. Stuff peppers to the brim with as much filling as possible and sprinkle with cheese
  14. Roast for approximately 10 minutes until cheese is golden brown and bubbly
  15. Enjoy on its own or with a side salad and tortilla chips!
