Juicy Baked Chicken Thighs in 40 Minutes

I love attempting new recipes, especially when one of my favorite cooking methods is involved! I’ve been extremely into baking or roasting my dishes as of late (see my baked fish here and roasted veggies here), so my next venture had to be cooking chicken outside of the regular stovetop. Making meals in the oven is one of my favorite methods as the cleanup is extraordinarily easy and I can pop my dishes in and leave them be! As soon as I found Island Vibe Cooking’s juicy baked chicken thighs recipe on YouTube, I knew I had to try it. Her whole channel is full of incredibly delicious looking foods, but the baked chicken thighs (which she posted a couple of years ago before her recent repost) was most intriguing to me! The recipe is straightforward and painless to put together with a handful of seasonings most people have in their households + Tony Chachere’s, which is the essential piece of the puzzle. I baked my chicken thighs for 30 minutes on 400 degrees instead of what Island Vibe Cooking listed on her recipe—350 degrees for 45-50 minutes—because I wanted a slightly crispier exterior in a shortened amount of time and I think the chicken turned out beautifully!

Ingredients (for two servings—recipe can be adjusted if using more chicken):

  • 2 large boneless skinless chicken thighs (bone-in, skin-on would be even more delicious!)
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1 teaspoon pepper
  • 3/4 tablespoon garlic powder
  • 3/4 tablespoon onion powder
  • 3/4 tablespoon paprika
  • 3/4 tablespoon dried thyme
  • 3/4 tablespoon dried parsley
  • 1 tablespoon Tony Chachere’s seasoning

Instructions:

  1. Preheat oven to 400 degrees
  2. Place both chicken thighs in a large bowl and drizzle olive oil all over
  3. Season chicken thighs with all of the seasonings and flavors mentioned above
  4. Massage seasonings into chicken pieces ensuring surface areas are covered with oil and flavorings
  5. Marinate until oven is ready to go
  6. Bake chicken for 30 minutes or until meat begins to crisp up and/or internal temperature reaches around 165 degrees (remember the meat will continue to cook while it cools down)
  7. Remove from oven and let cool
  8. Serve with rice, salad, and veggies of your choice!
