Day Two of Our Texas Trip

A couple days ago I shared the goings on of what my family and I did on day one of our Texas trip when we attended the first round of the men’s NCAA tournament in Fort Worth (read all about it here)! I was thrilled to reunite with my bff Lo and watch Baylor Men’s Basketball in real life for the first time since 2019 on my first day in the Lone Star State, and day two of our Texas trip saw Baylor Women’s Basketball, lunch with my bff Jonathan/Yonny, and even more Mexican food!

After I spent the night at Lo’s house, we woke up (late) and went to Nightlight Donuts to pick up some cronuts for my parents and sister as Megan was going to drive up to Waco later that afternoon to join us for the weekend! I’ve never had Nightlight Donuts before, but Lo and Jonathan have raved about it for years. I bought a half dozen mixed with their Beignet, Chocolate, Chocolate with Sprinkles, Cinnamon Sugar, Glazed, and Hot Fudge Sundae donuts and they were all deliciously soft and airy. I loved the Beignet one most of course. When Lo went to work, my parents picked me up and we met Yonny for my favorite sandwiches ever from Schmaltz’s. While not pictured, Yonny ordered a plain ass ham and cheese with literally just ham and cheese and I got the ham and swiss with lettuce, tomatoes, onion, black olives, and garlic butter on their homemade bread that’s crunchy on the outside and warm and soft inside. I love Schmaltz’s sandwiches and I miss them always! We soon enough bid see you soon to Jonathan before it was time to head to the Ferrell Center to watch Baylor play Hawaiʻi in the Women’s NCAA first round. UH and the Bears were neck and neck in the first half, but Baylor quickly outgained the former in the third quarter to win the game by 40 points (as they do). After the game (I took my mask off just for the above picture and only then) we met with several of my dad’s close friends, my Honolulu Star-Advertiser coworker Jason, and Megan and her partner for dinner at Rosa’s—a slightly fancier fast food Mexican place that serves amazing homemade tortillas! My mom adores Rosa’s (we all do of course) so we make sure to eat there at least once every time we visit Waco. I had a beef taco plate that came with three tacos topped with lettuce, tomatoes, and cheese, and I added salsa, guacamole, and queso for added flavor! We finished day two of our Texas trip stuffed and happy as ever to be in our favorite city and reunited with Megan!
